Vegan banana bread

So I wanted to make banana bread; I looked up a bunch of recipes but they all used grams and ml and I didn’t have scales so I found out how to adapt it to measuring by cups, then I turned it vegan. Yum.

Vegan banana bread

  • Servings: 1 loaf tin sized loaf

  • 3 bananas
  • 1 1/2 cups flour (I’ve used plain and rye, both work well)
  • 1/2 cup brown sugar
  • 1/3 cup melted butter (I just use vegan margarine)
  • 1 egg replacement (I use 1 tbsp ground flax seeds mixed with 3 tbsp water, left in fridge for 10 mins)
  • 1 tsp baking powder
  • 1 pinch salt
  • Optional: desiccated coconut


  1. Mash the bananas
  2. Mix in the sugar, melted butter, egg replacement, salt and baking powder
  3. sift and mix in the flour
  4. butter a loaf tin then pour in the batter
  5. optional: sprinkle desiccated coconut on top
  6. Bake in the oven for 45 mins to an hour. Test by inserting a toothpick or sharp knife, if it comes out clean, it’s done.


  • replace one banana with a couple grated carrots
  • add a couple spoons of peanut butter
  • replace a quarter cup of flour for desiccated coconut
