Vegan Sponge Cake

Here is a very simple recipe that I often use as a base.

Vegan Sponge Cake

  • Servings: 1 small-medium cake
  • Difficulty: easy

Ingredients

  • 200g self-raising flour
  • 3 level teaspoons baking powder
  • 115g sugar
  • 125ml vegetable oil
  • 325ml cold water
  • 2 tsp vanilla essence

Directions

  • Preheat oven to 190C/375F
  • Place all the dry ingredients into a bowl, and all the wet ingredients into a jug, slowly incorporate the wet ingredients into the dry
  • Split into 2 tins and Bake for 30 minutes or until you can insert a toothpick and it comes out clean
  • Leave to cool, then sandwich with your favourite filling (eg jam) and dust with icing sugar or cover with your favourite icing
